Barbecued Chicken and Black Bean Burritos

This dish is something everyone will like. 
It has an unusual ingredient....barbecue sauce.
Add a salad and you have a fast, tasty and 
nutritious dinner.
 This make 4 large burritos.
 Saute cut-up chicken, onion and garlic.
 Add a can of black beans, and barbecue sauce.
 Stir well and heat through.
 Sprinkle the top with cheese and let it melt.
 Scoop unto tortillas; top with sour cream.
Roll up and enjoy! Easy!

Barbecued Chicken and Black Bean Burritos
3/4 lb boneless chicken breasts, about 3
1 small onion, about 1/2 C chopped 
1 clove garlic, about 1t minced
1 T olive oil
1 can (15oz) black beans, drained and rinsed
1/3 C barbecue sauce
1/2 C shredded cheddar cheese
4 large (10-inch) flour tortillas
1/4 C sour cream
Cut the chicken into bite-size pieces.
Heat oil in a large skillet over medium heat. 
Add chicken, onion and garlic. Season with 
a little salt and pepper; cook for about 8
minutes or until chicken is done, stirring 
occasionally. Stir in  the barbecue sauce and
beans. Reduce heat and stir well to coat the 
chicken with the sauce. Sprinkle the cheese evenly
over the top and continue to cook until the cheese
 melts. Warm the tortillas in a dampened paper
towel in the microwave for about 45 seconds.
Scoop about 1/2 C chicken mixture down the 
center of each tortilla; top with a dollop of
sour cream and roll up.

Sea Bass with Wilted Spinach and Mushrooms


Sea Bass with wilted spinach and mushrooms
This is a delicious and flavoursome yet quick and simple dish, perfect for a midweek dinner done in a rush

Serves 4 small portions/2 large
Prep time:   10 minutes
Cooking time: 10 -12 minutes

Ingredients
50g unsalted butter
2 tbsp olive oil
2 shallots, peeled and finely chopped
2 garlic cloves, peeled and crushed
4 x 180g sea bass fillets, skin on and scored
150g button mushrooms, sliced
50–100ml fresh fish stock
250g baby spinach leaves
4–5 tbsp crème fraiche
Salt and freshly ground black pepper
1 lemon, cut into wedges

Method

1.  Heat a large frying pan and put in 30g butter and 1 tablespoon of the oil.  Add the shallots and cook over a low/medium heat for 3 minutes until softened, then add the garlic and cook for a further 2 minutes.

2.  Meanwhile in another large frying pan and add the remaining oil and butter. Once the oil is hot put in the sea bass fillets and cook over a medium heat for 2–3 minutes on each side. Always cook fish presentation-side down first. In this instance it should be skin-side down first.

3.  Add the mushrooms to the pan of shallots and cook for a further 2 minutes. Add the fish stock and allow to reduce for 1 minute before adding the baby spinach. If the liquid evaporates, add some more stock. Once the spinach has wilted, remove the pan from the heat and stir in the crème fraîche. Season to taste.

4.  Place the wilted spinach and mushrooms in the centre of each plate and put the sea bass fillets on top. Serve with the lemon wedges, enjoy!

Easy Baked Fish

Sit down to dinner in under 30 minutes with
 this easy way to make fish in the oven.
I used catfish, but scrod or other mild fish would also work.
 Melt the butter in a shallow plate in the oven.
 Coat both sides of the fish in the butter. 
Sprinkle with lemon juice, salt and pepper.
 Top with the crushed Ritz crackers and a little melted butter.
 Bake for 20 minutes. Longer for thicker fillets.
A nice buttery crunchy topping.

Easy Baked Fish
1 lb fish fillets, about 4
4 T butter, 1/2 stick
1-2 T lemon juice
salt & pepper
1/2 sleeve Ritz crackers, crushed

Put 3 T butter in a shallow baking dish and put it in
 the oven as it's preheating to 400. 
Rinse the fish and pat dry with a paper towel.
Remove the dish with the melted butter from the 
oven and lay the fish on and turn to coat both 
sides with butter. Squeeze 1/2 lemon, about 
1-2 T juice over the fish. Sprinkle generously with 
salt & pepper.Top the fish with the crushed Ritz 
crackers and drizzle the top with a the remaining
 melted butter. Bake at 400 for about 20-30 
minutes, until fish is opaque and 
the crumbs are golden.

tip: oven fries or small new potatoes can
bake along with the fish.

Three Cheese, Onion and Potato Pie


Three Cheese, Onion & Potato Pie
This stunning vegetarian pie is perfect for a mid-week meal and tastes absolutely scrumptious, pure comfort food at its best!

Serves 4-6
Prep time:   20-30 minutes
Cooking time: 1 hour 15 minutes

Ingredients
30g/1oz butter
280g/10oz onions, peeled, thinly sliced
1 tsp salt
2 tbsp caster sugar
930g/2lb 1oz potatoes, peeled, thinly sliced
140g/5oz crème fraîche
4 tbsp double cream
100g/3½oz mature cheddar, grated
100g/3½oz Stilton, crumbled
100g/3½oz Gruyère, grated
freshly ground black pepper
1 tsp grated nutmeg
500g/20 oz pre-prepared puff pastry
1 free-range egg, beaten, to glaze

Method

1.   In a large frying pan heat the butter and add the onions, salt and sugar, fry for 5-6 minutes until the onions begin to caramelize.  Remove from the pan and set aside.

2.  Meanwhile, cook the potatoes in a large pan of salted boiling water for 8 minutes, drain and then set aside.

3.  Preheat the oven to 220°C/425°F/Gas Mark 7.

4.  Mix the crème fraîche, cream and cheddar in a small bowl. Mix together the Stilton and Gruyère in a separate bowl.

5.  Layer one quarter of the potatoes, a third of the onions and a third of the Stilton/Gruyère mixture in the bottom of a large pie dish. Sprinkle with a little freshly ground black pepper and grated nutmeg.

6.  Repeat, working from the outside of the pie dish into the middle to achieve a domed effect, seasoning as you go, then pour over half the cream/cheddar mixture. Repeat this step then cover the filling with the remaining potato, ensuring none of the cream mixture is visible.

7.  Roll out the pastry so it is larger than the pie dish.  Cut strips from the side of the pastry.  Brush the rim of the pie dish with egg wash and place the strips around the rim of the pie dish and cover with egg wash.  Cover the pie with the pastry, using a folk press the edges of the pie.  Use any off-cuts of pastry to decorate the pie then brush the top with the remaining egg wash. Cut a small cross in the top of the pie to let the steam escape.

8.  Place the pie in the oven and cook for 30 minutes then reduce the oven to 180°C/350°F/Gas 4 and bake the pie for another 30 minutes or until golden-brown, enjoy!

{Paleo 101 Books} The Healthy Gluten Free Life by Tammy Credicott



The 3rd resource I want to share with you in this series of some of my favorite Paleo books is "The Healthy Gluten-Free Life" by Tammy Credicott. This book is more geared towards gluten free recipes, but many of the main dishes and vegetable dishes are also paleo-friendly!

At the beginning of the book Tammy shares her favorite tips for baking gluten free. One thing I enjoyed about the book is that Tammy prefers using "whole grain" flours (as I do) in her baking! She has great explanations of different gluten free flours, sugars (such as agave nectar, maple syrup, etc...), and special gluten free ingredients like xanthan gum or guar gum.

My favorite part of the book is the picture recipe index in the back of the book. You can look at a small thumbprint of each recipe and see which one you would like to make! I also love that there are so many paleo-friendly recipes in this cookbook. Nearly all of the main dish recipes and vegetable recipes are safe for a lower carbohydrate, paleo type diet. The options with this cookbook are virtually endless.

The recipes in the book are also dairy free and egg free -- excellent added bonuses for those with multiple food allergies or intolerances. The book is also listed as soy free, however several recipes do list soy sauce as ingredient with the option of using 'coconut aminos' in place of  the soy sauce. I mention this becuase where I live coconut aminos aren't very easy to find and I haven't been able to find a good replacement for soy-free/wheat-free soy sauce.

Be aware this book, as with many other cookbooks published by Victory Belt, are really large heavy books. They are beautiful, with full-color photos and great photography, but they are rather hard to carry around the kitchen. If you like e-books and e-cookbooks, buying the digital version might be a better option, especially if you have arthritis or other joint/inflammatory issues.

{Paleo 101 Books} Paleo Pals: Jimmy and the Carrot Rocket Ship by Sarah Fragoso


As you know I'm already a fan of Sarah Fragoso's blog, "Everyday Paleo" and her book of the same title. She's a talented trainer, writer, wife, and probably most importantly, an amazing mom. Her first cookbook shared favorite paleo family recipes, a unique workout system for those new to workouts and training, and a great introduction to the paleo diet for parents and kids alike.

This book however, is just for kids. (Well, I say that, but I thoroughly enjoyed reading it myself!) In this book little Jimmy is used to eating packaged, sugary, and very processed foods. His parents have discovered a more healthy way to eat: all natural fruits and vegetables, meats, chicken, fish, nuts, and even baked goods made with almond flour. But Jimmy is reluctant and doesn't want to eat the new healthy foods his mom and dad want him to try. Enter Paleo Pals, some really cool super-heros that take Jimmy on a fantastic food adventure to show him how and why it's important to eat healthy, whole, and natural foods.  The end of the book shares really fun paleo recipes that kids can make with a little help from their parents.

Overall this book is just plain FUN! Whether you're on a gluten free diet, the paleo diet, or a primal plan, or just want to incorporate healthier, whole foods into your everyday life, this is a great book to share with kids on why it's important. The pictures are super cute and colorful. The book is really fun to read and (while I don't have children) I think the characters can really relate to kids and their feelings.

I definitely recommend adding Sarah's newest book to your children's library. It would also be a great book to donate for the waiting room at your local doctor's office or even your local library. Have you read it? I'd love to know what you think of it!
